Use water at boiling temperature to release the scent locked in the Jasmine.
Jasmine Tea Of all the teas in China, jasmine tea is the best know. These tea are coming from Fu Zhou in Fujian Province where it has been scented five times between April and June with fresh jasmine blossoms as was the fashion during the Ming Dynasty. This method instills the green leaves with attar of jasmine. Afterwards, tea is crafted in many different shapes. Some leaves are placed in gauze, gently pressed into the shape of a flower, and then fire-dried to preserve the freshness. Some are hand-rolled into individual "pearls" to lock in the delicate aroma. When brewed, our sweet-tasting green tea releases the aroma of jasmine flowers. Brew slightly below the temperature of boiling water (200F).
